The Tarrazu region soil composition produces coffees with a pleasing, distinct acidity.   Higher elevations of 1,200 to 1,750 MASL and natural shade trees contribute to the coffee’s quality and unique characteristics.  The area around the region is made of small farms averaging about 2.5 hectares each.  The farmers deliver their coffees to Beneficio San Diego mill for processing. Beneficio San Diego is one of the most modern, innovative mills in Costa Rica.   Established in 1888,  it is one of the oldest coffee mills, Beneficio San Diego takes great pride in quality standards.   It is one of the most modern and innovative mills in Costa Rica.   And Beneficio San has taken a leading role in working with producers, ensuring community relations and sustainable production. After the coffee cherry is delivered to the mill, it is processed as a honeyed coffee.   This means part of the mucilage is left on the coffee bean during the drying process, producing incredible sweetness, fruity notes, and more body than fully washed coffees.   Medium roast with notes of Apricot, Caramel, and Bittersweet Chocolate.
