Colombia, Sierra Nevada, Finca Las Flores – Medium Roast

This washed lot comes to us from a group of five farms in Sierra Nevada, Colombia. Grown between 1,212—1,892 MASL on 95 hectares, the coffee is meticulously harvested in batches, and only ripe cherries are selected. Once collected, it undergoes initial processing at the mill, starting with floating the cherries. Then, they rest in a hopper overnight and are depulped the following day before being placed in fermentation tanks. Finally, the coffee is transferred to a silo for a slow, pre-drying before its final drying phase to ensure optimal quality.

In the nearby San José de Oriente region, community bonds have been strengthened by a developing social reintegration for former combatants of the Colombian armed conflict. Participating in these programs has enabled farmers to improve their living conditions through premium pricing and access to competitive markets. Further plans include expanding the pulping and composting areas, maintaining per-hectare crop productivity, and ensuring sustainability.
